Healthy after school snack


If your children are like mine, they come home from school like raviging beasts (cute ones, I do have to say!). My kids seem to come home starving every day after school, and many mornings leave in such a hurry that they don't eat a lot of breakfast.

These muffins are the answer for my children! They are hearty, healthy, and fill them up with something worthwhile, until dinner is done. Not to mention, they are a GREAT food storage recipe and can help use those long term grains in your storage--oats, wheat, and your flour.

Chocolate Chip Oatmeal Banana Muffins
1 1/2 c. flour (I used 1/2 wheat flour and 1/2 white flour)
1 c. sugar
1 tsp. soda
1 tsp. salt
2 tsp. nutmeg
3 tsp. cinnamon
1 egg
3/4 c. applesauce
2 c. smashed bananas (about 2-3 bananas)
1 3/4 cup oats
1 pkg. chocolate chips (I used Hershey's Cinnamon Chips--they tasted great!!)

Mix eggs, sugar, applesauce, bananas. Add everything else then chocolate chips.
Put in muffin tins and bake for 15 minutes at 350 degrees. YOu will probably want to double these--they are gone before you know it!

  5. These look delicious and I can't wait to try making them up. It's funny I just did a post on banana bread.

    My husband and I LOVE your Blog and I hope you know that all of your advice is wonderful and helpful and has really helped us feel like Food Storage is a reachable goal!!

    BTW...I can't wait to try out your Foccacia bread recipe with our garden tomatoes.

  6. I can't wait to make these... they look so yummy! I just made the best chocolate muffins this morning. This was a recipe that a friend gave me and I just fell in love.

    Big Bad Costco Muffins

    1 Devils food cake mix
    1 (3.9 ounce) package instant chocolate pudding (they were on sale this week so I stocked up on a few!)
    3/4 cup vanilla yogurt (I have also used plain)
    3/4 cup water
    1/2 cup oil
    3 eggs (I used powdered eggs)
    2 cups chocolate chips

    Preheat oven to 375 degrees. Lightly grease muffin pan (this makes about 20 muffins) or use muffin liners. Set aside. In a mixing bowl combine cake mix and pudding mix. In a separate bowl combine yogurt, water, oil, and eggs. Stir the wet ingredients into the dry ingredients just until combined. Stir in chocolate chips. Fill muffin tins about 3/4 full. Bake 20 -22 minutes or until center springs back. Cool on wire rack. These muffins will store for a couple of days, if you can avoid eating them that long.

  7. In the ingredients there is no oil listed. But in the instructions it says add egg, sugar, oil and bananas. Are these suppose to have oil?

  8. below the recipe, it says "mix eggs, sugar, oil, bananas" but there is no oil in the ingredients list. was it accidentally left out? i'm about to make these but i'm confused! thanks :)

  11. Sorry! I replace oil with applesauce and didn't change the instructions. You can use oil and your muffins will be even more moist..jut not as healthy. I have changed the mistake :) Thanks!!

  12. As a vegan I really LOVE this recipe. I did wonder if you've ever heard of a product called ener-G egg replacement and if so what you thought about it being in food storage? If not check it out (at least for baking with) it's quite easy to use and store!

  13. These look like great muffins. I hope to try them soon. BUT I am not sure how it is healthy when 1 cup of sugar is added as well as all of those chocolate chips. :-(

  14. That is true! They are fairly sweet, so I bet you could 1/2 the sugar and be fine if you were worried about the amount of sugar. You could probably use agave or something else like that if you would like. Great reminder :)
